Certifications

The first thing that farmers do in the process of making Organic Coconut Sugar is that they prepare Laru or Natural Preservatives before tapping Nira. Laru needs to be added to the coconut sap so that there is no damage during fermentation.

After the tapping process is complete, the sap is filtered on a frying pan using a 100 mesh stainless steel pan to support the level of cleanliness with the quality of the coconut sugar produced. Usually, Nira is cooked for up to 4-5 hours, depending on the volume of Nira.

When the nira has produced foam during cooking, coconut milk or coconut oil is added to remove the foam in the cooking process. When it turns red and gives off a distinctive sugary aroma, it means that the Nira has become caramelized and is ready to be removed.

When the sap has dried, then start to stir with the coconut shell so that the coconut sugar becomes powder. After that it was sieved using an 18 mesh sieve and dried in the sun to dry.

5.

Checking is done twice, then a wet sieving is carried out with 18 mesh and a 3-layer magnet trap so that the metal mixed in the product can stick to the magnet trap.

6.

The next process, dried using an oven which takes 4-5 hours until the dryness level is below 2% and then sifted again.
Then a sorting process is carried out to separate the coconut sugar from foreign objects such as ant heads, dirt, burnt coconut sugar and then sifted again and packaged.
