The process begins with preparing Laru or Natural Preservatives before tapping Nira. In addition, Laru is added to the coconut sap to prevent damage during fermentation.

After tapping, the sap is filtered using a 100 mesh stainless steel pan. Following this, Nira is cooked for 4-5 hours, depending on the volume.

When the nira has produced foam during cooking, coconut milk or coconut oil is added to remove the foam in the cooking process. When it turns red and gives off a distinctive sugary aroma, it means that the Nira has become caramelized and is ready to be removed.

Once the sap has dried, it is stirred with coconut shell to create powder. Farmers use an 18 mesh sieve for purity before drying in the sun.

We perform two checks and wet sieving with an 18 mesh and 3-layer magnet trap to remove metal contaminants. The dried coconut sugar is sorted to remove foreign objects and then packaged.
